Kiwi Chia Pudding

Ingredients

  • 2 tablespoons chia seeds
  • ¼ cup water
  • 1–2 tablespoons coconut yoghurt, or coconut milk or another gluten-free plant-based milk to your preferred consistency
  • Maple syrup, honey or stevia, to taste (optional)
  • Sliced kiwi fruit, to serve
  • 1 tablespoon almond butter or Jules’ homemade granola (optional topping)

Method

  1. Mix the chia seeds and water in a bowl or jar. Stir well, then stir again after a few minutes to break up clumps.
  2. Cover and refrigerate for at least 30 minutes, ideally overnight, until the seeds have absorbed the water.
  3. Stir through 1–2 tablespoons of coconut yoghurt. For a runnier consistency, stir in coconut milk or another gluten-free plant-based milk a little at a time.
  4. Add your preferred sweetener to taste, if using.
  5. Top with sliced kiwi fruit and, if you like, a tablespoon of almond butter or homemade granola.
